    A RAW file is a ‘lossless’ image that gives you all the information as the sensor sees it, typically a boring 18% grey. This means you need to add your own saturation, contrast etc. JPEGs are lossy files and they compress the data that you can’t see and applies its own algorythm to apply saturation, contrast etc.

    RAW files take a lot longer to write to the card than JPEGs do (and RAW+JPEG takes longer still), so in the genres of photography where you need to take a lot of pictures quickly, a given camera will almost always perform better when shooting JPEGs.     You most definitely should not fire your photographer because they shoot JPEG. I would use it more as a sign your photographer probably knows what they are doing and does not have to resort to adjusting the file in photo software. I was taught in college that raw is a tool, there is a time and place to use it.

    JPEG is a smaller, simpler file allowing you to put far more images on the card, but does not scrub up as nicely post edit. Once you save your edited image, if you don't like it you cannot reverse it, unlike RAW. Speaking for myself, I would go with RAW because of it's better post editing results, and much less loss of quality.
