    The most secure way with all of the cameras you mentioned is to spot meter the highlights you want to preserve and then add to your exposure 2.5 to 3 stops (experiment on this). Use also bracketing for extra safety. This is correct, except that it's 2.3 stops over "center", or 2 stops if you want to play it safe.
