    George Crum was an American chef, best known as the possible creator of potato chips. Born and raised in Saratoga County, New York, George had an African–American/Native American lineage. As a youngster who was deprived of a proper education, George began working as a guide on the Adirondack Mountains in his teenage years.

    As a young man, Crum worked as a guide in the Adirondack Mountains and as an Indian trader. Eventually, he came to realize that he possessed exceptional talent in the culinary arts. In the summer of 1853, he was working as a chef at Saratoga Springs' elegant Moon Lake Lodge resort, where French-fried potatoes were a favorite on the menu.

    Portrait of a George Crum with his wife In 1860 George opened his own restaurant in a building on Malta Avenue near Saratoga Lake, and within a few years was catering to wealthy clients including William Vanderbilt, Cornelius Vanderbilt, Jay Gould, and Henry Hilton. His restaurant closed around 1890 and he died in 1914 at the age of 92.
