    Proofs are half done prints. that the customer can chose from before you do all the hard editing. They usually have all the changes you may do to all of the images. Such as white ballance etc etc. But do not have any fine tuning. I know of a few photographers who cut the colors to a muted tone so the customer cant complain proof to final.
